After getting recommendations for a slow feed dog bowl (or using a small stainless bowl upside down in a larger stainless bowl), I'd say you should go that route. I am going to post a video because I came up with a good technique that I want to share, but the coffee was immediately easier to roast when I went that route. Here is a video of a guy doing the technique. I can't do that because the fan isn't strong enough, but if I stir while doing it, it has come out great.

EDIT: Not that people don't have great results with the normal method, I just had such an easier time with this method, that I thought I would at least share.
