My set up is pretty simple but it suits me really well.
Keyboard - Corsair Raptor LK1 Gaming Keyboard
Mouse - E-Blue Cobra 2400dpi High Precision Gaming Mouse
Headset - SteelSeries Siberia V2 Fullsize Gaming Headset (They come in both analog and usb)
Flight Stick - Thrustmaster T-Flight Hotas X Flight Stick
I have a super cheap and lightweight setup and I just plop it into my lap when I want to play. Not the best setup but it works pretty well!

Old post, I know, but I've been using this HOTAS for Elite: Dangerous and have found it satisfactory:
I fly SB in VR and I use this hotas. It does just fine. This stick separates from the throttle so I can place them in front of my arm rests. Has plenty of buttons. Responsive and sensitive. It's a good little setup for the price. So yeah I definitely recommend it.
While I like what you did and thanks a lot but I got this HOTAS and I don't see any key maps for that one.
I didint mean the really expensive hotas but this one http://www.amazon.com/Thrustmaster-T-Flight-Hotas-Flight-Playstation-3/dp/B001CXYMFS
It is the most complete package to me, not only for flying but also for driving since you have ruddercontrols on the throttle for steering.
With this joystick you get everything you need at a very good price.
I picked up a T-Flight X in anticipation for Squadrons. I've been playing the old X-wing games with it, and some Elite Dangerous, and it works great! Currently listed as $61. The stick has twist axis, and the throttle has a paddle-thingy, so you can skip getting rudder pedals if money's tight right now.
