Those are all decent boards, though I'd try to avoid Epomaker if you can. They have some good boards, TH80 included, but will not do a good job of giving you after-sale support. Assume they will not honor a warranty, and they will charge you for replacement parts if something fails. Worst case, they may require you to ship your board to them in China, which shipping would cost as much as a new board.
For only $10 over your budget you could get a Keychron Q1. The knob version is $220 and only has three keys on the side, but you could map the knob to do whatever you want in VIA, and it also has a key in the F13 spot, which not all boards have that. That way you could get the exact switches and keys you want, but honestly it would probably end up going over your budget because they do not charge face value for their switches or caps in their pre-builts, so the pre-builts end up being the better deal.
As for switches, if you like browns, get browns, no shame in that. Not liking browns is more of a meme than anything, they're a perfectly decent switch choice. The Budgerigar switches are a heavy tactile, more similar to the U4T or Panda switches than the browns, so if you're going for a light tactile switch I'd stay away from it.
