I have all of these.

You need a roller, no matter what. I actually have an extra one of these that I keep for crackers and other non-pasta stuff.

The three-piece set contains the roller, spaghetti cutter and fettucine cutter. For my money this is the best deal unless she wants to use the rolled dough in a completely different way, like just lasagne sheets or bowties. If she uses the roller followed by one of these cutters, she'll have dinner ready before she hardly realizes it, without even breaking a sweat.

For lasagne sheets, just roll out and cut to the size you want with a knife or rolling cutter (like a wheel with a handle). For bowties, I can recommend this dohickey.

What you get just depends on what kind of pasta she wants to make.
