CAT6 from windy city or similar.
Windy City Wire did very well in this test:
https://ipvm.com/reports/cat-6-cable-shoot
As did Belden.
They didn't test Monoprice (wish they would).
Windy City Wire:
Since the cable will have some outside exposure: Belden 2416A

https://catalog.belden.com/techdatam/2146A.pdf
CMR and CMX rated for fire.
Another UV cable, from Mohawk. (It has the slim dielectic wire separator like Belden does, since Belden sold them the US factory that made it, and didn't write the patent number on each of their cables.)
This is one that has gel for moisture protection, but I don't think you need that:

(Doesn't sound like you need Plenum OP)
OP, I recommend these keystones:

Way it's engineered it makes sure it gets done correctly.
Best price I found was at Falcon Tech: (not affliated)

Multiple colors for color coding jacks

Or ICC
I recommend a keystone patch panel for the center of your wire "star"

https://icc.com/product/blank-wall-mount-patch-panel-8-ports-zero-u-ez-style/
Using more than one OK!
If you have a rack:
Oh: Klein punchdown tool is good.

A punch down stand is handy:
hth and good luck, PM if questions?
Yeah, I would assume that keystones are for solid also.
Unfortunately, I know enough, to know that there might be a difference with cables vs ends and thats about it, lol.
Just thought I would pass this along.
And if you are using keystone jacks, maybe a punchdown stand would be helpful?
