All three come to temperature fairly quickly, and all keep the temperature correct, even over several days.
My opinion: The Joule is the best and smallest, but *requires* you to use the app on your phone. You cannot use it any other way.
The Anova also has an app, but you don't have to use it. All the controls are on the device itself.
The Wankle has the best clip for connecting to your pot, but it has several issues I don't like. (1) No app. (2) It turns off when done. If it finishes when you aren't there, your food might get cold. (3) You *must* set a time for cooking. It won't start until you do. Worse: To be reliable, you have to set the time first, although setting the time is the second selection, not the first.
