I haven't found them to be too uncommon.

I've got perforated sheet pans in both half and quarter standard sheet sizes, but I haven't any perforated eighth sheets (my favourite size) at least in standard sizes. (I did get some non-standard in the ballpark though.)

Similarly, from the commercial size I have some lovely deep (3" upwards) perforated GN half and GN quarter pans.

Though, that said, perforated pans to seem to be a little easier to find in the UK.
