I have seen people claiming they have issues with external NVMe products on Mac, but rarely Windows so that's kind of backwards.

A 256GB PM991 can be purchased for $20 on Amazon. Another $29 for a Plugable enclosure gets you a miniature portable drive capable of 800MB/s read/write over USB. Not sure what the PM991 is rated for, but likely at least 300 TBW, or ~1200 full overwrites.
I paired this setup with Ventoy and now I have a USB drive I can write tons of ISOs to for installing operating systems and running live boot linux distros and I have room to spare for utilities, drivers, files, etc.
It's reasonable to be concerned. There are two different and incompatible M.2-to-USB adapters out there - ones for SATA M.2 and ones for NVMe M.2. This drive (Intel 660p) is NVMe.
I've used this model as my go-to adapter for a while. It's not the cheapest, but it definitely works with a 660p - I've used that drive in that adapter before.
