We use two smaller coolers when we car camp.
One for meats, that we want to stay very cold. We freeze jugs/2 liter soda bottles filled with water for use in here, and pack it with loose ice around the meats and jugs.
One for things that need to stay cold or that we want cold, like condiments, vegetables, etc.
And a water container for ice for drinks, another small one for water or tea or kool aid.
We find that doing it like this we are circumventing some cross contamination and keeping things colder, because no one is rooting around the cheese to find a coke.
