They're light, not small. Even the larger Victorinox knives seem light to me. That said, if you want to buy a similar heavier knife, buy them Mercers.
Your squeeze bottle article got me eating more salads, my colon thanks you sir.
A few years passed since you have written the Guide to Chef Knives article. Do you still stand by your Henckels International Classic recommendation? Would the Mercer Genesis be an acceptable substitute for that knife?
I only ask because I've been seeing some negative reviews on the Henckels such as; handle falling apart, the newer batch of Henckels Internationals lower quality from previous batches, and blade dulling quickly.
I am learning to cook and your articles have helped me a lot. I am currently using a budget knife from Smart and Final, which is very similar to the Update International chef knives but allows for a pinch grip. It stays sharp, honed, and has a blade guard I made out of a sheet of cardboard.
I loved the feel of the Wusthof Classic you mentioned (I held one in my hand at a restaurant supply store) and I was wondering what your thoughts on the Mercer Genesis linked above? I don't want a Wusthof Classic right now as I live at home and knives tend to get beat up around here.
